It’s a known fact that rice and potatoes are among the most commonly consumed staple foods in the world. They both provide energy to fuel our active lifestyle, and work well as a base for a variety of dishes. Rice and potatoes offer a number of advantages because they contain resistant starch -a specialized carbohydrate, and they also benefit your health because of the mineral content.

However, my health-minding, body-conscious girls don’t eat rice. They eat their main meals with a side dish of assorted veggies, or quinoa -the seed of a vegetable crop. So in order to balance out the carbs in their diet, I substitute rice with potatoes as often as I can.

Trying to keep fit & look good, it’s been a while since they last ate rice. So as a mother, I do my best to make sure they eat healthy in spite of their strict diet & active lifestyle.

All my three kids live a very busy & active lifestyle. Like Kap -the tennis aficionado, they are into sports whenever their time away from school allows. Wakeboarding, scuba-diving, biking, or a workout in the gym at least if they are too busy in the week. Hubby & son as you may know from my previous blog posts, they eat practically anything & everything, so no problem there. But my 2 girls will be the death of me when it comes to meal planning. I have to continuously rack my brain to come up with meals they will not only eat, but also enjoy.

Just this Holy Week, we spent a weekend in Batangas doing the things they love to do the most..

.. snorkeling, scuba diving & wake-boarding. My water babies!


Potatoes are rich in Vitamin C (antioxidant), Fiber (lower blood cholesterol), Vitamin B6 (amino acids), Iron (blood), Potassium (lowers blood pressure). Potatoes are also CHOLESTREROL-FREE & have ZERO SATURATED FAT.

Studies show that eating potatoes can help boost athletic performance. Potatoes are rich in Vitamin B6 which is necessary for the breakdown of glycogen, the form in which sugar is stored in our muscle cells and liver, so this vitamin is a key player in athletic performance and endurance.

Not only this, potatoes are healthy meal options because of its natural nutritional content. When prepared properly, potatoes can lessen the risk of heart ailments and can aid in living a healthier eating lifestyle.

One of my go-to recipe for a quick snack fix for my busy kids is GRILLED US POTATO WEDGES. Quick & easy for an undomesticated mommy like me. And a no-nonsense baon too that the kids can easily dump in a container & eat on their way to school, or in between classes which fuels their energy -allowing them to last the whole day through.

Grilled US Potato wedges are one of the staples in our house. We always have giant bags of US Potato Wedges in our freezer. They are a great source of nutrients alongside a healthy sandwich. When you put a nice warm pile of US Potato wedges next to any snack like burger patties or hotdogs sans bread, suddenly your meal feels more substantial.

And because I love you guys so much, I’m sharing with you our family’s TOP SECRET to making the perfect grilled US Potato Wedges:

  • 3 minutes in the microwave shaves about 20 minutes off of grilling time (a small miracle for busy mommies). If you prefer, you could also boil the potatoes (just plunge them into boiling water for a few minutes, or until the potatoes start to feel softer but not cooked all the way through). Not only does this make cooking time faster but also allows you to cook the potatoes on a higher-heat grill, which is how you get that delicious, crispy, smoky exterior. (Look for US Potato wedges cut from RUSSET POTATOES. These are medium to large-sized potatoes, oblong or slightly flattened and oval. They have a light to medium russet-brown, netted skin and white to pale yellow flesh. They have a floury, dry, light and fluffy texture and a hearty skin that is chewy when cooked. Their flavor is mild and earthy, and they have a medium sugar content.)
  • Ingredients: US Potato Wedges, 2 tablespoons olive oil | 1 teaspoon paprika | 1 teaspoon garlic powder | Salt to taste | Cooking oil

Frozen US Potatoes, I find, are much bigger & plumper than our local variety. Plus of course they’re pre-cut so it saves me the cutting time, lol.

Another secret to making your kids not get sick & tired of the usual potato dish is to level up the dips. Be adventurous! Ketchup & mustard is fine but let’s be honest, it does get boring after a while. Changing dips & creating different versions keep the kids excited, and us mommies on our toes.

  • 1/2 cup lowfat, plain Greek yogurt
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • Salt and pepper, to taste
  • Whisk together all ingredients in a small bowl until well combined.
  • 1/3 cup lowfat, plain Greek yogurt
  • 2 tablespoons prepared basil pesto
  • Whisk together all ingredients in a small bowl until well combined.
  • 1/2 cup diced tomatoes
  • 2 chipotle peppers
  • 2 tablespoons lowfat, plain Greek yogurt
  • Whisk together all ingredients in a small bowl until well combined.


I usually google dip recipes to mix up the taste a bit. But we always use US Potatoes for the main ingredient.

And there you have it! Easy-peasy meals sure to enjoyed by kids (and kids at heart) of all ages!

Our pool is getting great mileage this summer season. And you know how swimming whets the appetite & brings out the munchies. It’s great that we have US Potatoes in the freezer ready at any moment’s notice. My language of love is feeding my kids, so there’s always something ready for them any time of the day.  Especially for this growing boy who is FOREVER hungry. <3
