I kept marvelling at all the beautiful chandeliers artfully placed in strategic places of the hotel. They’re not your usual old-fashioned chandeliers, which is why I was so fascinated. They are works of art, each with a story to tell.

I was only able to dine at Spectrum Fairmont Makati once, for lunch. It was bright & cheerful, but the night brings with it a cozy glow. And although each has its own merits, I think I’m liking night time at Spectrum better. <3

Along with happy smiles were these beautiful, colourful veggies that screamed Italy. Italian cuisine is always bursting with flavours & colors. I was in a good mood already & I haven’t even started!

Begin your meal with the vibrant tastes of antipasti, artisanal deli fare and rustic homemade breads. Savor classic Italian entrées such as slow-roasted porchetta and hearty osso bucco, while enjoying authentic specialties such as bruschetta, risotto, ravioli, pasta and pizza made fresh at live culinary theaters.

Polenta. Polenta. And more Polenta! ;) Baked, grilled, wet, steamed corn, and Baked Potato.

Polenta (Polente or Poleinte in France) is cornmeal boiled into a porridge, and eaten directly or baked, fried or grilled. The term is of Italian origin, derived from the Latin for hulled and crushed grain (especially barley-meal). It comes from the same base as “pollen”.

But more than anything, I celebrated the cheese offerings & had a cheese party. The cured meat assortment is not to be scoffed at. I was truly impressed with the many choices. The next time I set foot in Spectrum Fairmont Makati, I’ll make sure to just have the cured meats & cheese. With wine. Be still my heart! <3

Chocolate Cannoli. One does not eat at an Italian restaurant & pass up the Cannoli & Tiramisu.

 —

Cannoli are Italian pastry desserts. The singular is cannolo, meaning “little tube”. Cannoli originated in Sicily and are a staple of Sicilian cuisine. Cannoli consist of tube-shaped shells of fried pastry dough, filled with a sweet, creamy filling usually containing ricotta.

As you can see, I was able to enjoy the guiltless sugar-free chocolate barks with nuts.
