What’s new at Bamba Bistro!

What I haven’t told you is, before we had dinner at Kessaku Alabang (see previous post), we had a “LIGHT SNACK” over at BAMBA BISTRO! And by light, I mean the exact opposite. :P

It’s not often that I get to lure Richard & Richie to come to the South, so when they had a sleepover/staycation for the Halloween Block & Roll at Bellevue Hotel Manila, Guia & I bombarded them with invites left & right to showcase the South. I promise you, hindi kami probinsya.

Ang daya nila diba? For them, going to the South means having to staycation coz it’s too far daw. Hello, pag nag-megamall ako uwian ha! TWO HOUR DRIVE!

I also wanted them to meet the brilliant TINA LEGARDA, chef extraordinaire responsible for the ultra exclusive, by appointment only, TINA’s TABLE. Click HERE to read Manila Standard’s feature just 2 months ago! For your private parties, Chef Tina can whip up just about anything. She found her passion for cooking at the tender age of 8 and has been cultivating her talent in the kitchen ever since. She’s practically a super expert!

Her bistro may be small, but it’s NEVER empty! So I was very happy when she was able to accommodate our tight little group at 4PM which was the only time we could get a table. Yes, it’s THAT crazy! If you don’t believe me, then head on over to THIS LINK & see BAMBA BISTRO featured as one of Spot.PH’s Top 10 delicious finds! \m/

Bamba Bistro

55 Aguirre Avenue corner Arsenio Luz, B.F. Homes, Parañaque (02) 519-7097

I was ecstatic to find out that Tina has new offerings. I’ve tried almost everything on the menu, so this was a very pleasant surprise indeed. <3

French fries moderne P 190 – topped with honey, feta cheese and fried rosemary. I’ve broken off with carbs, but I had one teensy weeny piece of this to try. And it was so worth it.

Pan-fried Scallops P 590 – Sweet Corn Purée, Spinach, Romesco, Truffle, Quail egg, Breadcrumbs (**new menu-coming soon)

My companions, HAPPY & GRUMPY (ok I promise this is the last time I’m calling you that haha!) were not salad people, so I hogged all 3 salad dishes to myself, lels. Ate also had a jolly good time with these green leafy veggies.

T.A.S. (That. Awesome. Salad.) P 495 – grilled Prawns, marinated salmon, fig, Parmesan flakes, balsamic cream, potato strings.

Apple and Fennel Salad P420 – anchovy-date dressing, goat cheese, romaine (**new menu-coming soon)

Foie gras Salad P590 – sautéed peaches, ricotta, Raspberry demiglace, vinaigrette cream.

Cacio e pepe P420 – “cheese and pepper” grana padano, Pecorino and parmigiano (**new menu-coming soon)

Porcini crusted steak P 995 – Angus Ribeye, Duckfat corn kernels and an arugula salad.

Grilled Prawns P 695 – served with roasted tomato risotto, goat cheese berlinoise sauce and reduced balsamic.

S’mores Dip P 250 – Warm Milk Chocolate, torched marshmallows. served with Graham Crackers. I have to admit that I tried this too. And after I got such nice results from my blood chem too. Boo! Must learn to restrain myself from yummy temptation! @_@

Because Tina probably figured that Food Bloggers loved to eat and were bottomless pits, she also sent out…

Artichoke Crostini P 290 – Ricotta cheese, basil Purée, reduced balsamic, toasted almonds. An old-time favorite.

Huevos Flamencos P 210 – Chorizos, Ham, beef cooked in tomatoes. Egg.

Le Cochon slider P 350 – crispy pork belly, red slaw, eel sauce and wonton chips.

Surf n’ Turf Tacos Tenderloin P 595. Sriracha aioli, corn kernels, salsa verde, fish and shrimp, watermelon salsa, garlic aioli, eel sauce, alfalfa sprouts.

Bolognese P 260.

Duck ravioli P 495 – porcini cream sauce and truffle.

Warm Apple Pie P 165 – served with Vanilla Ice cream and Gouda Cheese.

Pizzookie P 230 -served with vanilla ice cream and Salted Caramel.

Brewed Coffee P 60.

Truly, you have made traffic getting from our place to yours super worth it, Tina. <3 I knew you wouldn’t let me down. Bamba Bistro is really a gem in the South worth discovering.. and seeking!

Tina has been hot on the news lately with article after article of great reviews. Here’s another from PHILSTAR. Her fast rise is definitely UNSTOPPABLE.

And in case you’re looking to find unique but practical gifts for Christmas, Tina sells these adorable aprons, a project from her college days that has gone on even after she put up her “real” businesses. APRONS BY AMUSE BOUCHE for only 600ph/pop. Adult & kiddie sizes available.

Lookee who’s having F-U-N! ;))

Thank you so much Tina for accommodating us even though you had to cook for a party right after we left. We really had fun with all your exciting dishes bursting with flavor & love! :-*
