It’s F1 Hotel Manila‘s 3rd year to host a Filipino Food Festival this month of June featuring dishes from LUZVIMINDA (Luzon, Visayas & Mindanao) by guest chefs BRUCE LIM, TATUNG SARTHOU and SIDER TADTAD in celebration of Independence Day nationwide.
Taste and savor authentic Filipino dishes masterfully crafted by this year’s star-studded culinary line-up: Rustique Kitchen’sChef Bruce Limrepresenting Luzon; Alab Filipino Restaurant’s Chef Tatung Sarthou for Visayas; and flying all the way from the South is Chef Sider Tadtad of Big 8 Corporate Hotel to represent Mindanao.

It’s been a while since I last set foot in F1 Hotel Manila & being in F1 is just like coming home to your family. The Bossman & I are so comfy at F1 Hotel Manila that we are just in casual wear! :P Feeling bahay talaga namin haha. I’m so loving the burst of colors that certainly adds to the festive spirit, a feeling that is always celebrated by the hotel led by my good friend -PR extraordinaire Pau Esmedilla (left).
Of course Lechon will always & forever be a Filipino fiesta staple. Can you spot the chicharon??? <3
Even though F1 Hotel Manila is celebrating Filipino Food Festival & is focused primarily on LUZVIMINDA, assorted seafood is aplenty for you to enjoy.

Make sure you start your meal with either the Papaitan, an ilocano specialty, or the Seafood Sinigang. Sure to warm your belly in preparation for the feast ahead.

Asked of Chef Bruce’s favorite Filipino comfort food: Sinigang reminds him of home and home-cooked meals. It’s the kind of dish that no matter how hard our day turned out, or how sick we get, we are enveloped with sagad sa butong init at yakap that only a tamarind broth can bring. Sinigang remains to be the ultimate & unbeatable Filipino comfort food and Chef Bruce Lim brings to us this state of bliss in F1 Hotel Manila’s Luzviminda 3. Food is all about feelings, and Sinigang for him connotes pure happiness.
A must try is Chef Bruce’s take on dinuguan.. the DINUGUAN PIE! A marriage of Puto & Dinuguan that would get you coming back for more, I swear!
Lengua Pastel Maja Blanco. Chef Bruce is always inventive with his food & makes the kitchen his personal playground. Make sure to start off your buffet with Chef Bruce’s Luzon fare.
Aligue Ravioli. Because Chef Bruce stayed in the US for a while, you can always be assured of something american fusion in his dishes. I got excited with this very unique pasta dish.
Representing the Visayan region is Alab Filipino Restaurant’s Chef Tatung Sarthou whose favorite Filipino dish is Chicken Inasal. A simple dish but well-loved by everyone. It also pairs well with almost any other Filipino food. If you go for the more traditional Filipino dishes, then Chef Tatung is your guy.
Poki-poki Gratin. An eggplant dish topped with a browned crust using breadcrumbs, grated cheese, egg and/or butter
Beef Kansi. Kansi is an Ilonggo recipe that is a cross between Bulalo and Sinigang. I’m telling you, F1 Hotel Manila’s Luzviminda 3 is not something that you should miss if only for the chef’s play on Filipino dishes.
“The “LOTLOTAN” style by Chef Sider Tadtad of Big 8 Corporate Hotel representing Mindanao is a favorite cooking method that uses a bamboo pole to enhance the flavors of a dish (meat or seafood). Cooking a la lotlotan style is also associated with the generous use of natural herbs and spices that is very abundant in Mindanao as can be seen in the dishes Chef Sider has prepared for F1 Hotel Manila‘s Luzviminda 3 like this LINUTLOT KOTIPA WAY OW AN (traditional seafood dish From Mindanao) & ATA NA KAN ON (Squid Ink Rice).
A big round of applause to these FUNtastic chefs who made F1 Hotel Manila‘s LUZVIMINDA 3 a huge success! And hello to Chef Eugene San Juan (sandwiched between Sider & Bruce), F1 Hotel Manila’s NEW executive Chef! Expect even more yummy things to come under his helm.

For the adventurous, there the DURIAN CHEESECAKE, and the Theo & Philo Chocnut Cheesecake (which I liked more between the 2).
Kap’s favorite dessert just got better. Flavored crepes in (original), pandan & ube!
Did I say DURIAN? Yep, there’s also a DURIAN ICE CREAM & ITLOG NA MAALAT with TUYO ICE CREAM. Weird, but it works. The latter I mean. I liked the sweet & salty mix. You gotta try something new at least once in your life right? Well Guia of FOOD REVIEWS MANILA & Richie of THE PICKIEST EATER seem to think so! ;)
And for an extra 100 php, have a bottomless drink of sago’t gulaman or melon. Kap cannot decide which one he likes best so he got both. ;)) Now that completes & makes for a true Filipino Food Festival experience. CHEERS to F1 Hotel Manila & the Filipino people!
