Idaho Meat Fest. The Cafe, Hyatt City of Dreams Manila
The girls suddenly decided that they want to go on a meatless diet and have more of the seafood & veggie spread on our table. Kaya araw-araw na lang na ginawa ng Diyos, isda at gulay ang pagkain sa bahay. Sawang-sawa na ako huhu. Every meal time, you’d catch me staring dreamily out the window -thinking of chicken, pork, and beef while I munch on my unsalted grilled fish & veggies. :'(
I don’t know why, but I can never be fully satisfied with just veggies & seafood no matter how fresh & appetizing. Parang may kulang. Pescetarian or vegetarian, I will never be. I’m carnivorous through & through.
Which is why I was SO very happy that The Cafe at Hyatt City of Dreams Manila, in partnership with Snake River Farms, launched the very timely Idaho Meat Fest. A break from my culinary torment, lol. This meaty four-day feast from April 14-17, 2016 (until this Sunday only!) presents mouthwatering dishes made from the finest, tastiest meats including Kurobuta pork and Wagyu beef! <3
Finally enjoying a meaty lunch with my favorite eating buddy & forever partner in crime. <3

Snake River Farms in Eastern Idaho, USA, carefully selects Angus or Wagyu cattle and Kurobuta hogs and slowly raises them using methods adopted from the heritage-steeped Japanese feeding process. This includes a slow-paced, sustainable diet that takes up to four times longer than the traditional U.S. cattle production approach. The result is delectable beef that is exceptionally tender and flavorful, offering a one-of-a-kind dining experience which you may experience at the Idaho Meat Fest at The Cafe, City of Dreams Manila.
Guests can indulge in delectable prime cuts of Wagyu beef like the center cut sirloin and New York strip loin that is personally prepared by guest chef, Matt Carter from Arizona, USA.
Lucky to get a photo op with my favorite PR man OUIE BADELLES (leftmost), Chef Matt Carter (2nd from left), and Chef Michael Luedtke (right), executive chef of Hyatt City of Dreams Manila.
Matt Carter, a chef and successful restaurateur, joins Hyatt’s Executive Chef Michael Luedtke and his team to cook American dishes you will surely enjoy during the Idaho Meat Fest. With The Cafe’s ala minute service, you can have your favorite meat grilled according to your preference, then paired with a serving of Yorkshire pudding. Have it stuffed in a quesadilla for a Mexican delight, or be creative & ask for any other way you want it.
So very honored to have chefs Matt Carter & Michael Luedtke cook for us at the Idaho Meat Fest. <3
The beauty of Snake River Farms American Wagyu Beef is its simplicity. It has been slowly raised from the best livestock for intense and succulent flavor.
Snake River Farms is passionate about delivering the finest eating experience -a luxury once reserved exclusively for the world’s most esteemed restaurants.
Sous-vide is a method of cooking in which food is sealed in airtight plastic bags then placed in a water bath or in a temperature-controlled steam environment for longer than normal cooking times—96 hours or more, in some cases—at an accurately regulated temperature much lower than normally used for cooking, typically around 55 to 60 °C (131 to 140 °F) for meat and higher for vegetables. The intent is to cook the item evenly, ensuring that the inside is properly cooked without overcooking the outside, and retain moisture.
Snake River Farms American Kobe (Wagyu) beef is celebrated by chefs and beef connoisseurs throughout the world and featured in a number of Michelin starred restaurants.
Have a taste of the very best meats and you might just retreat to your own private Idaho. ;)
After the short demo, Kap is now (hopefully) a master chef when it comes to cooking steaks haha! ;)

O.A. ba to say I was actually crying happy tears as I polished off my delectable, carnivorous plate with all things sugar, spice & everything nice?
Not to be missed, Snake River Farm‘s very tender, very tasty Kurobota Pork. I will be dreaming of this baby forever more. :'(
So juicy! <3 I simply had to have a full plate all to myself.
All meats & no sweets makes Jane a dull girl. Now we don’t want that, do we? :P A giant cookie and some dark chocolates on the side made for a very happy me. Now this is livin’ la vida loca. ;)
Meat craving satisfied! Thank you so much, Hyatt City of Dreams Manila for spreading joy & sprinkling lots of happiness in my otherwise boring diet. And now, back to the regular meatless menu back home, boo! Chef Matthew, can you pretty please take me to Idaho with you? ;P
