I’ve always been a fan of Buddy’s Pancit Lucban. I remember the first time we came across it was at the newly-opened Market! Market! Buddy’s Pancit Lucban was a fast food stall on the outskirts. Pinipilahan talaga sya along with a barbecue stand beside it.
I love pancit & this lucban style that has suka served alongside gives me & my belly happiness.
Pancit Lucban, or Pancit Habhab, is a noodle dish popular in the Quezon province. It is commonly served in a banana leaf with vinegar & consists of different vegetables and fried pork meat.
Here’s a similar recipe for Pancit Lucban..
1/2 kilo pancit miki (miki lucban) | 1/4 kilo pork liempo | 3 cloves minced garlic
1 chopped onion | 5 tablespoons soy sauce or fish sauce | 3 cups pork broth | 1 cup baguio beans | 1 sliced chayote | 1 sliced carrot | 3 bundles chopped bok choy | 1/2 teaspoon ground pepper | 4 tablespoons cooking oil | sukang pinakurat
In a pan, heat oil and stir fry all vegetables for 3 minutes. Take out & set aside. Then in the same pan, saute garlic and onion. Add fried pork, water, soy sauce, salt and pepper. Bring to boil. Add the noodles, then mix everything together including the pre-cooked vegetables you set aside. Transfer into banana leaves then serve hot with vinegar.

I love Buddy’s Pancit Lucban. But sad to say, I won’t be going back any time soon. Hanggang “Take-Out” nalang muna ako! :P Not unless they add more “friendly” tables & chairs..
Mang Buddy, I know you want to squeeze in as many tables & chairs as you can. Pero please naman, maybe you can provide at least 3-4 regular tables for the “bigger” customers? Ang hirap kumain nang hindi humihinga ha! Try nyo pohwz. @_@
